Method of preparation:
Preheat oven to 180 degrees. Put the egg whites and mascarpone in a bowl, beat until mixed. Add half the sugar and stir again. Set aside, and in a separate bowl put the yolks with the remaining sugar and beat until smooth.
Add olive oil, orange peel and juice, flour mixed with baking powder and salt. Stir and carefully combine with the first mixture. Spread muffin tins with paper in colors of your choice, spread one and a half tablespoons in each and bake for 15-20 minutes. Cool and set aside.
Prepare the glaze by mixing the butter with the vanilla, powdered sugar, salt, cream, lemon juice and beat with a mixer until smooth. Fill a syringe with the resulting cream and decorate the muffins. Arrange on a plate and serve.
