Sparkling wine can lose its bubbles if left open for a long time, but it can still be used to make a healthy and easy sauce for pork or fish. Its aroma combines perfectly with orange juice and coriander.

Required products :

  • 1 tablespoon extra virgin olive oil
  • 1 shallot, chopped
  • 1 and 1/3 teaspoons of champagne + 1 tbsp
  • 1/2 teaspoon orange peel
  • 1/4 tea cup of orange juice
  • 1 tablespoon honey
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 tablespoon butter

Method of preparation :

Heat olive oil in a small saucepan over medium heat. Fry the shallots, stirring often, until soft.

Pour 1 and 1/2 cups of champagne, orange peel, orange juice, honey, coriander, salt and pepper and bring to a boil, stirring occasionally. Cook for about 10-12 minutes.

In a small bowl, mix the remaining 1 tablespoon of champagne with the cornstarch, then pour into the saucepan, stirring constantly until thickened. Remove from the heat, add the butter and stir to melt.

Serve the sauce with a portion of roasted meat or fish.
