How To Cook Orzo Pasta With Vegetables - Recipe

Required products :

  • 200 grams of pasta orzo
  • grape seed oil for frying
  • 1 large sweet potato
  • 2 onions - finely chopped
  • 4 cloves garlic
  • 1 tablespoon grated ginger
  • 180 grams of shiitake mushrooms
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons kale leaves, or baby spinach
  • pepper
  • thin slices of parmesan if desired

Method of preparation :

Boil the orzo paste in salted water for 6-7 minutes. When it is ready, strain it and pour fat, stir and set aside.

Cut the potatoes into small cubes.

Put a large pan to heat with a little fat on the bottom. Fry the potatoes for about 4 minutes, until caramelized, at a very high temperature. Turn them over and cook for another 3 minutes.

Reduce heat, add onion and season with salt. Cook until the onions begin to brown. Add the mushrooms in the center of the pan and cook for 4 minutes without stirring or turning. Then turn them over and after another 4 minutes all the products should be completely ready.

Mix the soy sauce, balsamic vinegar and 2 tablespoons of grape seed oil. Pour this mixture over the vegetables and cook for 3 minutes.

Increase the temperature of the hob to the maximum and add the orzo paste in portions, stirring well after each portion. Cook for 5 minutes, until the pasta begins to brown slightly.

Add the spinach (or kale) and cook for 1 minute to soften.

Remove from the heat, add salt if necessary and serve hot with a few thin slices of Parmesan.
