Peel a squash, grate it and grate it.
Season the shrimp with a pinch of smoked paprika, salt and pepper, stir and store in the refrigerator.
Season the chicken in the same way and set aside.
Heat a thick-walled pan and fry the chorizo sausage (pre-cut) in it until browned - about 2-3 minutes. Transfer it to a bowl.
In the fat left in the pan, fry the meat (if necessary, put 1-2 tablespoons of olive oil) for about 6-7 minutes, until done. Put it next to the chorizo.
In the same pan, fry the onion, seasoned with salt and pepper, for about 5 minutes until soft. Add the garlic and the remaining smoked pepper, saffron and after 30 seconds pour the tomatoes.
Cook for 3-4 minutes until the sauce thickens slightly. Then pour the rice and broth into it. Add the sausage and chicken and cover. Cook almost until the rice is ready, while the liquid has been absorbed for the most part - about 10 minutes. Arrange the mussels and shrimps on top of the rice. Cover and cook for another 10-12 minutes until the dish is fully cooked.
Remove from the heat and allow the paella to cool for a few minutes. Serve with lemon slices.
