Necessary products:

 

for the basil sauce

 

  • 1 teaspoon unsalted cashews
  • 1/2 tea cup unsweetened almond milk
  • 1/4 teaspoon basil
  • 2 cloves garlic
  • 1/2 teaspoon sea salt

 

for tomato sauce

 

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 crushed garlic cloves
  • 2-3 ripe tomatoes, finely chopped
  • 1 cup boiled artichoke
  • 1/4 tea cup fresh basil
  • salt and pepper to taste

 

for the barks

 

  • 6 zucchini
  • pinch of sea salt
  • fresh basil
  • olive oil

 

Method of preparation:

 

Soak the cashews in a bowl of water for 30 minutes. Pour into a blender jar, add the remaining ingredients and beat until smooth.

Heat olive oil, sauté chopped onions, garlic, tomatoes, artichokes and basil. Fix with salt and pepper. Reduce heat and simmer for another 15 minutes.

Finely chop the zucchini, add salt and drain. Prepare a pan, pour a ladle of tomato sauce on the bottom, put zucchini and garnish with basil.

Arrange and finish the lasagna with the tomato salsa in the same way. Sprinkle with olive oil and bake for 30-35 minutes at 200 degrees. Serve the dish warm, sprinkled with fresh basil.
