In a bowl, mix the yogurt / kefir with the water, egg, sugar, add a pinch of salt and stir. Add the sifted flour, baking soda and stir until the lumps disappear.
If the dough is liquid, use a little more flour. If it is too thick, dilute with water.
Pour the melted butter into the prepared mixture, stir and bake pancakes.
Make a cream by beating the butter (at room temperature) with the powdered sugar until you get an almost white fluffy mass. Add a spoonful of condensed milk, vanilla extract, beat once more and finally combine with cottage cheese. Beat again.
It's time to assemble the cake.
Cover the bottom and walls of the dish with plastic wrap. Put a few pancakes, which should cover the entire inner part of the form.
Apply a little cream, sprinkle with raisins, if you decide to use. Next are pancakes (for example 2), the ends of which fold in the middle of the future cake.
Continue lining up in the same sequence until the cream is exhausted. Finish with a row of pancakes, the ends of which also curl towards the center.
Put some weight on the cake and put it in the fridge for an hour.
Once cool, turn over on a tray, remove the foil and decorate the dessert with fresh or frozen fruit of your choice. You can sprinkle with powdered sugar or decorate in your favorite way.
