How To Cook Pancakes With Bacon, Hot Pepper And Cheddar - Recipe

Required products :

  • 1 tablespoon butter
  • 120 grams of bacon, finely chopped
  • 1 1/2 teaspoons corn
  • 1-2 hot jalapeno peppers, finely chopped
  • 8 green onion stalks, thinly sliced
  • salt and pepper
  • 1 teaspoon corn flour
  • 1 cup white flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons honey + more to serve
  • 2 eggs
  • 1 1/4 teaspoons buttermilk
  • 2 tablespoons oil + more to spread on the pan
  • 120 grams of cheddar, cut into small cubes

Method of preparation :

Heat the butter in a pan and fry the bacon, adding 1 tablespoon of water. When the liquid evaporates and the bacon becomes crispy (after about 5 minutes), add the corn, hot pepper, half of the onion, after a minute season with salt and transfer to a plate.

Combine the two flours, add salt, baking powder, honey, eggs, buttermilk and 2 tablespoons of oil. Put the remaining onion in the mixture, mix the dough.

Add the cheddar cubes.

Heat a non-stick pan and grease it with oil.

Pour about 1/2 cup of the mixture into the pan (the goal is to make small pancakes so you can bake several at a time). In the center of each pancake, still unbaked, put 1 teaspoon of the bacon mixture.

Cook the pancakes in the standard way: when they are firm on top, turn and bake on the other side.

Use a large spatula to make them easier to turn.

Serve with honey.
