How To Cook Pancakes With Grated Potatoes With Tomatoes And Chickpeas - Recipe

Required products :

  • 450 grams of potatoes
  • 350 grams of sweet potatoes
  • 160 grams of parsnips
  • 2 eggs
  • 2 tablespoons quinoa flour
  • 200 grams of small tomatoes - halved
  • 1 hot pepper
  • 80 milliliters of olive oil
  • 1/2 teaspoon sugar
  • 400 grams of chickpeas
  • 2 green onion stalks, thinly sliced
  • 2 teaspoons balsamic vinegar
  • 60 grams of baby spinach

Method of preparation :

Preheat the oven to 200 degrees and line a large baking tray with parchment paper.

Grate the potatoes and parsnips (if you have a food processor, it will be easiest with it). Put half of the vegetables in a clean kitchen towel and squeeze the liquid out of them as much as possible. Transfer to a bowl and repeat with the remaining vegetables.

Add eggs, flour, season with salt and pepper, mix.

Put the tomatoes and peppers (cut in half) in the pan, pour olive oil and sprinkle with sugar, salt and pepper. Bake for 15 minutes until caramelized. Finely chop the pepper.

Meanwhile, pour olive oil into a pan and heat it.

Put a quarter cup of the mixture in the pan and press with a spoon to thin to about 0.5-1 cm thick. So fry the potato pancakes and turn them carefully in a plate, then bake on the other side.

Drain on paper.

From this amount 12 pancakes are obtained.

Mix tomatoes, hot peppers, chickpeas, onions and vinegar in a bowl.

Place the tomato mixture on the pancakes and serve.
