How To Cook Pancakes With Mushrooms, Spinach And Goat Cheese, Baked With Mozzarella - Recipe

Required products :

  • 12 thin pancakes
  • 500 grams of mushrooms (oyster mushrooms or mushrooms)
  • 300 grams of spinach
  • 150 grams of goat cheese
  • 150 grams of mozzarella
  • small bunch of parsley
  • 10 sprigs of thyme
  • 1 clove garlic
  • salt, pepper
  • 3 tablespoons olive oil


Method of preparation :

Turn the oven to preheat to 175 degrees.

Cut the mushrooms into thin slices, finely chop the parsley leaves, wash the spinach and chop or chop coarsely.

Heat the oil in a large pan and pour the mushrooms into it. Fry them, stirring, over medium heat until golden. Then add the garlic, parsley, thyme and season.

After a few minutes, reduce the heat to medium, add the spinach to the other products and cook for two minutes. Finally, add the goat cheese and leave the filling on the hob until it is completely melted.

Spread the mixture in the middle of each of the pancakes, which you roll. Arrange them in a rectangular tray measuring 30x20 cm and sprinkle with crushed mozzarella.

Cover the dish with aluminum foil and bake in the oven for 15 minutes (until the mozzarella melts).

Serve the pancakes hot.
