Necessary products

For the pancakes:

250 grams of wheat flour

3 eggs

250 milliliters of fresh milk

350 milliliters of water

15 grams of butter

1 teaspoon sugar

pinch of salt

 

For the stuffing:

2 large quinces

2 tablespoons honey

20 grams of fresh ginger

a handful of nuts

40 grams of butter

2 tablespoons oil

Method of preparation:

Mix in a large bowl or blender the milk, 250 ml of water, sugar and a pinch of salt. Beat the eggs separately, add them to the milk and stir. Sift the flour and pour it into the resulting mixture, beat with a wire whisk. Add the melted butter, pouring in a thin stream. Leave the dough at room temperature for 1-2 hours. Pour a little water into it (about 100 milliliters to get the required consistency) for 15 minutes before you start cooking the pancakes. Bake in the standard way in a pan greased with oil.

Cut the quinces every 8 hours and remove the core.

Melt the butter (at medium temperature) provided for the filling in a pan and put the quince pieces in it. Fry them on both sides over low heat for about 5 minutes. The astringent taste disappears and the fruit becomes soft and sweet, put on a plate. Wipe the pan with a napkin and pour honey into it. Heat until bubbles form and then add sliced ​​ginger. After 2 minutes, return the quinces to the pan again, sprinkle with pieces of walnuts and turn the fruit several times to soak it well with the ginger honey. Walnuts should also be covered with honey glaze. Leave on the stove for no more than 3 minutes. Remove the ginger.

 

Fold the pancakes in half and heat them in a large non-stick pan. Put 2-3 pieces of quince and a few walnuts in each of them.

Arrange them in pairs on a plate, pour over the hot ginger honey and serve.
