Required products :

for vegetables:

  • 3 tablespoons white wine vinegar
  • 1 tablespoon pesto
  • 1 teaspoon oregano
  • pinch of salt and pepper
  • 1 red pepper, chopped
  • 6 tomatoes, cut into quarters
  • 2 large mushrooms, chopped
  • a handful of basil

for pancakes:

  • 100 grams of flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 125 milliliters of buttermilk
  • oil to grease the pan

Method of preparation :

Mix the vinegar with half the amount of pesto, oregano and season with a pinch of salt and pepper. Add the peppers, tomatoes, mushrooms and half the basil leaves. Stir to flavor the slices. Bake for 30 minutes at 180 degrees, shaking the pan from time to time.

In the meantime, you can bake the pancakes - mix the flour and soda with 1/2 teaspoon of salt and a little freshly ground black pepper. Make a well in the center, where you knock the eggs, put the remaining pesto and pour the liquid. Stir with a wire whisk.

Grease a non-stick pan with oil and take 3 tablespoons of the dough, put it in the center of the pan and bake thick pancakes. If your pan is big enough, you can easily bake 2 pancakes at a time.

Serve by placing 2 pancakes on a plate. Cover with roasted vegetables, sprinkle with the remaining basil leaves. Take some of the sauces that have separated in the pan when roasting the vegetables and pour them over the dish.

Serve the snack hot.
