How To Cook Pancakes With Spinach, Mozzarella And Garlic - Recipe

Necessary products

For the pancakes:

150 grams of flour
1 teaspoon powdered sugar
2 eggs
450 milliliters of milk
100 grams of melted butter
1/2 teaspoon salt

For the stuffing:

250 grams of spinach
1 clove of garlic
a pinch of grated nutmeg
250 grams of mozzarella
1 teaspoon butter
2 teaspoons pine nuts or others of your choice

 

Method of preparation :

Sift the flour into a bowl, add the powdered sugar, make a hollow in the middle and beat the eggs in it. Pour a little fresh milk over them and stir lightly.

Gradually scoop some of the flour aside with a wire whisk and knead the dough, pouring enough milk to get the consistency of thick cream. Then pour the remaining milk and butter. Beat everything once more, let the dough rest for 30-40 minutes, then bake pancakes from it.

Take care of the stuffing.

Finely chop the garlic clove, stew in 1 teaspoon of oil. Add the chopped spinach leaves and stir. Once softened, season with salt, pepper and nutmeg.

 

Cut the mozzarella into circles, put 1-2 of them on each pancake, as well as a little of the spinach filling.

 

Fold in four and arrange in a parchment tray. Cover with foil and bake in the oven until the cheese is melted (about 10 minutes is enough).

Meanwhile, roast the nuts in a dry pan and sprinkle with the finished pancakes.
