How To Cook Panzanella - Italian Salad Of Tomatoes And Toast - Recipe

Required products :

  • 220 grams of old bread
  • 1/4 cup olive oil + 2 tbsp
  • 3 large tomatoes, best "buffalo heart" (about 4 tea cups in sliced ​​state)
  • 1 cucumber
  • 1/4 tea cup fresh basil leaves
  • 1 tablespoon red wine vinegar
  • coarse salt and freshly ground black pepper to taste

 

Method of preparation :

Cut the bread into 1 cm thick pieces, spread them on both sides with olive oil (2 tablespoons) and place on a heated grill for about 3-4 minutes. When the pieces cool, break them into large cubes.

Tomatoes and cucumbers (peeled) cut into cubes (about a centimeter side), finely chop the basil leaves.

In a large bowl, mix the crispy bread cubes with the tomatoes, add the cucumber and basil. Season with the remaining olive oil and vinegar, add salt and pepper to taste. Stir and serve.

You can add olives and / or tuna if you wish.
