Required products :

8 egg yolks
150-180 grams of sugar
200 milliliters of sweet white wine
50-80 milliliters of strong coffee
juice of half a lemon
200 milliliters of liquid cream
pinch of ground hot red pepper
caramelized nuts of your choice - to decorate the dessert

Method of preparation :

Separate the egg whites from the yolks. Eggs and wine must be chilled. You can use egg whites to make kisses.

In a deep bowl, mix the yolks with the sugar and wine. Put the dish in a water bath for 4-5 minutes, beating its contents continuously with a wire whisk until it thickens.

The mixture should increase its volume by 1/4. Allow to cool (you can put in an ice bowl or in the fridge) and then add a pinch of cayenne pepper and the juice of 1/2 lemon.

In a separate bowl with a mixer, beat the cream, add the yolks and mix thoroughly with a spatula. A creamy combination is obtained.
You should add brewed coffee to it. You can replace it with honey to enjoy honey parfait, also with berry puree or jam from such. Delicious options are obtained by adding chocolate, marmalade or citrus peels.

Distribute the finished parfait in cups, bowls or other suitable containers and store in the refrigerator for 12 hours.

Caramelize walnuts or other nuts of your choice to decorate the dessert.
