Required products :
550 grams of flour
400 milliliters of fresh milk with a fat content of 3.2%
120 grams of butter
5 grams of dry yeast
10 grams of sugar
1 incomplete tablespoon of oil
salt to taste
600 grams of hard cow's cheese
150 grams of soft cheese of your choice
1 equal tablespoon of sour cream
2 eggs
Method of preparation :
Sift the flour into a deep bowl, separate about 20 grams, and to the rest add the dry yeast, salt, sugar, pour the milk (at room temperature), oil and put 20 grams of butter (softened).
Mix everything until smooth, if necessary, pour a little water (about 50 milliliters).
Close the bowl with the dough and let it stand for 30-40 minutes. Then divide it into 5 parts.
Start making the filling. Grate the cheeses (leave a little of the hard - about 70 grams), mix them in a suitable container and add 20 grams of butter and 1 egg.
Sprinkle the dough with a little flour and roll out each part in the form of a circle 5 millimeters thick.
Punch the dough around the perimeter with a toothpick to let the air out.
In the middle of each base put about 150 grams of stuffing. Close with the dough and pinch the edges. Sprinkle a little flour on the surface of the loaves and roll them until they reach a circle with a diameter of 8-10 millimeters. Punch the surface again in several places and sprinkle with the reserved cheese. Add the same amount of softened butter. Then spread the beaten eggs with the second egg, beaten with sour cream.
Bake them in a preheated oven for a maximum of 10 minutes.
Before serving, grease with the remaining melted butter.
