Necessary products:

 

  • 1/2 cup coarsely ground breadcrumbs
  • 200 grams of cottage cheese
  • grated rind of one lemon
  • 1 egg
  • 1/2 teaspoon chopped rosemary
  • 6 tablespoons flour
  • 1/2 cup grated Parmesan cheese
  • pinch of salt and freshly ground black pepper

 

Method of preparation:

 

Put the cottage cheese in a bowl, add the flour, breadcrumbs and lemon zest.

 

Add the grated parmesan, rosemary, egg, salt and pepper.

 

Stir the mixture until the products are mixed and pour the flour on a floured surface.

 

Form a dough and divide it into parts. Roll out equal-sized wicks and cut them into equal-sized cubes.

 

Pour water into a saucepan, add salt and, after boiling, blanch the gnocchi. Strain, cool and cook to your liking. You can freeze them so you will always have them ready.
