Required products :

  • 1/2 teaspoon barley
  • pinch of salt
  • 4 teaspoons fresh parsley, chopped
  • 3 tablespoons dill, chopped
  • 3/4 cup celery, thinly sliced
  • 4 radishes, thinly sliced
  • 1/2 teaspoon sumac, ground
  • 5 tablespoons crushed hazelnuts
  • 2-3 tablespoons lemon juice
  • 1/4 tea cup cold pressed olive oil
  • 1 tablespoon walnut oil
  • freshly ground black pepper
  • crushed hazelnuts for sprinkling

Method of preparation :

  • Heat 3 teaspoons of water in a medium saucepan and after boiling, add the barley and salt.
  • Reduce heat, cover the pan and simmer the barley for about 45-50 minutes until soft.
  • Drain the water, return the barley to the pot, cover it with a clean cotton cloth and close with the lid. Let it stand for about 15 minutes.
  • Spread the towel on a flat surface and spread the barley on top to cool.
  • Transfer to a large bowl and add the remaining ingredients. Stir well to distribute evenly.
  • Serve the parsley salad sprinkled with crushed hazelnuts.
