How To Cook Parsnip And Rice Salad With Tahini Dressing - Recipe

Required products :

  • 500 grams of parsnips, peeled and cut into thin strips
  • 2 1/2 tablespoons olive oil
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 2 tablespoons sesame seeds
  • 130 grams of wild rice (or basmati rice)
  • 2 red onions, cut into strips
  • 2 tablespoons white wine vinegar
  • 3 tablespoons tahini
  • 1 handful of fresh mint leaves, chopped
  • 1 handful of fresh coriander leaves (or parsley), chopped
  • 2 tablespoons pomegranate seeds

Method of preparation :

Preheat oven to 200 degrees.

Season the parsnip with olive oil, turmeric, coriander and spices to taste. Sprinkle with sesame seeds and bake for 30 minutes or until soft.

Boil the wild rice (or basmati rice) according to the instructions on the package.

Heat 1 tablespoon olive oil and fry onions with 3 tablespoons water. Cook for 10-15 minutes, stirring often, until soft. Increase the temperature, add 1 tablespoon of vinegar and cook until bright pink.

Combine the tahini with the remaining vinegar and enough warm water to get a creamy dressing, season to taste.

Mix the rice with the onion and 3/4 of the fresh mint leaves and coriander (or parsley). Serve the salad in three plates, garnish with roasted parsnips, pomegranate seeds and other fresh leaves. Drizzle with the tahini dressing and serve.
