Required products :

  • 1 1/2 teaspoons small pasta
  • 1 tablespoon salt
  • 2 tablespoons butter
  • 1/4 tea cup self-swelling flour
  • 1 cup fresh milk
  • 1/8 teaspoon hot red pepper
  • 2 teaspoons Dijon mustard
  • 1/2 cup grated cheddar
  • 1 cup grated mozzarella
  • 2 eggs
  • 1 1/4 tea cup (160 grams) finely crushed chips with ketchup
  • frying oil

Method of preparation :

Boil the pasta with a little salt and drain when ready. Set aside.

Melt the butter in a saucepan. Add 2 tablespoons of flour and stir until the mixture becomes a paste. Gradually add the milk, stirring constantly with a wire to dissolve all the lumps of flour. Cook for about 2 minutes on high heat until the sauce thickens.

Remove from the heat, add the cheddar, half the mozzarella, hot red pepper and mustard. Stir to melt the cheeses, and mix with the pasta.

Refrigerate for two hours. Add the remaining mozzarella and mix well. Take 2 tablespoons of the mixture and form small balls, which you arrange on a baking tray lined with baking paper. Freeze for 2 hours.

Prepare the breading - put the beaten eggs in a wide plate, in another put the crushed chips, and in a third - the remaining flour.

Take the frozen balls and bread them first in flour, then in egg and finally in chips. Arrange back in the tray. Allow to thaw at room temperature for about 30 minutes before frying.

Fry the bites in an oil bath. As soon as they acquire a pleasant golden color, remove and allow to drain the excess fat on a sheet of kitchen paper. Serve them warm.
