How To Cook Pasta Bucatini With Red Potatoes And Pesto - Recipe

Required products :

  • 1 large sweet potato
  • 1 red onion
  • 2 tablespoons olive oil
  • 400 grams of bucatini paste

About the pesto:

  • 1/3 tea cup olive oil
  • 4 teaspoons kale or spinach
  • 1/2 cup fresh parsley
  • 1/2 cup Parmesan cheese, plus more to serve
  • 1 clove garlic
  • 2 teaspoons lemon peel
  • 1/2 tablespoon lemon juice

Method of preparation :

Preheat oven to 220 degrees. Peel and cut potatoes into small cubes and onions into large slices. Season with salt and pepper, add 2 tablespoons of olive oil and bake for 25 minutes until the vegetables are completely cooked.

Meanwhile, put parsley and kale in a robot and cut 4-5 times with a pulsating motion. Add parmesan, garlic, lemon zest and juice. Blend again with pulsating movements, about 10-12 times, until the desired consistency of the pesto is obtained. During the grinding of vegetables, gradually add 1/3 cup of olive oil.

Boil the pasta and strain it, but keep 1/4 cup of the liquid.

Mix the bucatini, the liquid, the pesto and the baked potatoes. Mix well and serve the dish sprinkled with a little Parmesan.
