Required products :

  • 225 grams of colorful bacon with skin
  • 1 tablespoon olive oil
  • salt and pepper
  • 340 grams of rigatoni (tubular pasta)
  • 60 grams of grated hard cheese (Pecorino)

Method of preparation :

Cut the bacon into thin small sticks and fry until the fat melts and small appetizing and crispy sticks are obtained. Transfer with a plate, on a napkin.

Add 1 tablespoon of black pepper to the fat in the pan and wait a minute for the aroma to release. Remove the pan from the heat.

Boil the pasta in salted water until ready for 4 minutes and 30 seconds. Take 2 cups of the liquid in which the pasta was boiled and transfer to the pan. Bring to a boil, stirring occasionally.

When the pasta is ready, drain it and transfer it to the pan (save the water in which you cooked the pasta).

Continue to cook the pasta for 6-8 minutes in the pan to absorb the aromas and the pasta to cook completely. If the liquid starts to run out before the pasta softens, add more of the water.

Finally, add the meat, cheese (save some for sprinkling at the end) and wait for it to melt. Season with salt and pepper at the end and serve.

When serving, add more cheese in each portion.
