Required products :

  • 5 egg yolks
  • 1 whole egg
  • 120 grams of grated Parmesan cheese + more to serve
  • 1 1/2 teaspoons black pepper
  • 700 grams of mushrooms, cut into quarters
  • 1/4 teaspoon olive oil
  • 450 grams of orekie paste
  • 2 small onions, peeled and finely chopped
  • 6 thinly sliced ​​garlic cloves
  • 1 teaspoon parsley (leaves + stems), cut in bulk

Method of preparation :

Fill a large saucepan with water and add plenty of salt. Bring to a boil.

Meanwhile, beat the yolks and the whole egg together with the parmesan and black pepper, set aside.

Heat a saucepan well, then add the fat and mushrooms, stirring occasionally every 4-5 minutes - the mushrooms should fry well and brown - it will take about 15 minutes. When 10 minutes have passed since frying the mushrooms, put the pasta in boiling water to boil (it should be slightly firm in the middle - al dente).

We return to the mushrooms again - we add onions, garlic and 1 1/2 teaspoons of salt to them. Fry, stirring often, to soften and release its aroma, but should not brown - for about 1 minute.

In the meantime, the pasta should boil. Separate 2 tea cups from the water, then drain the pasta.

Put the pasta with the mushrooms, along with 1 hour of the liquid. Cook on low heat for 2-3 minutes until the pasta absorbs the liquid. Remove from the heat and leave for 3 minutes (do not skip this step, because if the pasta is too hot, when you add the eggs to them you will cook them and you will have a paste with scrambled eggs instead of a delicious tender sauce).

Add half a cup of the preserved liquid from the paste to the eggs, stirring constantly and vigorously.

Carefully add the eggs to the pasta in a thin stream, stirring with a wooden spoon, you should get a creamy smooth sauce to cover all the pasta.

Finally add the parsley and stir for the last time.

Try and season with salt and pepper to taste.

Serve the pasta, adding a little Parmesan cheese and a pinch of black pepper in each portion.
