How To Cook Pasta Croquettes With Mushrooms And Cheese Breading - Recipe

Learn how to cook "Pasta croquettes with mushrooms and yellow breading". Delicious recipe.

Required products :

  • 300 grams of pasta
  • 300 grams of mushrooms (preferably fresh, but you can also use frozen or dried)
  • 200 grams of yellow cheese (slightly hard)
  • 6 tablespoons liquid cream with 35% fat (can be replaced with sour)
  • 1/2 cup broth (chicken, vegetables, meat)
  • 2 eggs
  • 2 tablespoons breadcrumbs
  • 1 tablespoon butter
  • frying oil

 

Method of preparation :

Boil the pasta according to the instructions on the package, drain the water. Grate the cheese.

Cut the mushrooms, fry them for 7-8 minutes in 1 tablespoon of oil (stir).

Mix the egg with the cream, add the mushrooms and half of the grated yellow cheese.

Pour the cooked pasta with the broth, add 50 grams of yellow cheese and add the egg-cream combination. Stir and distribute evenly in a rectangular pan, cover with cling film, place some weight and refrigerate for 3 hours.

When you take the pasta out of the fridge, cut it into pieces and dip in the beaten eggs. Mix the breadcrumbs with the rest of the yellow cheese and roll the croquettes in this breading.

Fry them in very hot oil until golden brown (about five minutes on each side).

Remove the finished ones on paper, it will absorb the excess oil that the croquettes have absorbed during the heat treatment.

Serve with blueberry sauce or vegetables.
