How To Cook Pastries With Almonds, Rum And Chocolate Glaze - Recipe

Necessary products

For swamps:

300 grams of butter

75 grams of wheat flour

150 grams of crystal sugar

150 grams of powdered sugar

10 eggs

75 grams of cornstarch

100 grams of crushed almonds

15 grams of vanilla sugar

10 milliliters of dark rum

 

For the glaze:

100 milliliters of cream with a fat content of 33%

100 grams of dark chocolate

 

Method of preparation :

Divide the eggs into whites and yolks.

 

Mix the softened butter with the starch, powdered sugar and beat.

 

Add the finely chopped almonds, vanilla sugar

 

and without stopping to beat, add the yolks one by one.

 

Then pour the flour, pour rum (or cognac), beat.

 

Beat the egg whites with the sugar until they form "peaks".

 

Add several portions to the resulting mixture.

 

You should get a dough like the one in the picture.

 

Line with baking paper a form measuring 22 x 30 cm.

 

Pour a ladle of dough, distribute it evenly on the bottom of the dish.

 

Place in a preheated 220 degree oven on the highest level for about 3 minutes (until browned).

 

Remove from the oven and pour another ladle of the raw on the baked dough, bake again in the same way. Repeat the procedure until the mixture is exhausted.

 

When you have finished with the last layer, leave it to cool, during which time make the glaze.

 

Mix the cream and chocolate, melt them in a water bath and spread the dessert.

 

When the glaze hardens, cut into pieces and serve.
