Required products :

  • 1 and 1/2 teaspoons butter
  • 2 leeks, only the white part, cut into thin slices
  • 4 teaspoons chicken broth
  • 1 teaspoon fresh thyme, chopped
  • sea ​​salt and pepper to taste
  • 2 teaspoons frozen peas
  • 450 grams of fresh asparagus, trimmed and sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon white vinegar
  • 4 large eggs
  • 2 teaspoons extra virgin olive oil
  • 4 slices wholemeal bread, toasted

Method of preparation :

Melt the butter in a large saucepan over medium heat and fry the leeks for 4 minutes, stirring occasionally. Pour the chicken broth, thyme, salt and pepper to taste. Simmer, add peas and asparagus, cover and cook for 3 minutes. Blend the pea mixture with 3 and 1/2 tablespoons of parsley until smooth.

Pour water into a saucepan and bring to a boil, then reduce heat, pour vinegar and stir. Beat the eggs in a saucepan and cook for 3 minutes, then remove with a slotted spoon and place on a plate covered with paper.

Serve the soup in bowls, garnish with poached egg and sprinkle with olive oil, parsley and toast.
