Required products :

300 grams of peas

2 sprigs of asparagus

1 tablespoon olive oil

2 leaves of gelatin or 2 teaspoons of powder

4 tablespoons dry white wine or lemon juice

140 milliliters of thick cooking cream

1/2 teaspoon chopped tarragon

salt, pepper to taste

balsamic vinegar for spraying when serving

 

Method of preparation :

Grease 6 suitable molds with a capacity of 100 milliliters with olive oil, put parchment on the bottom.

Cut the asparagus and steam them together with the peas for 3-5 minutes, until they soften but do not change color. Separate 6 tablespoons of peas in a small bowl, pour olive oil over them and leave for a while.

Grind the remaining vegetables to a puree using a food processor, for example.

Dissolve gelatin in wine or lemon juice.

Put the pan on low heat for 5 minutes, stirring during this time.

Beat the tarragon cream until thickened.

Mix gelatin with vegetable puree, add cream, season with salt and pepper.

Distribute the combination in the prepared molds, filling 3/4 of them. Put them in the refrigerator for 2-3 hours.

Then transfer the mousse to a plate, using a sharp knife to separate it from the walls of the dishes.

Sprinkle the dish with the previously set peas, sprinkle with olive oil, balsamic vinegar and serve.
