Fresh and crispy pea salad with bacon, radishes and warm dressing. Suitable for a picnic in the park or for making a tortilla.

Required products :

  • 4 cups peas, thawed or fresh
  • 1/4 small head of red cabbage, thinly sliced
  • 3 radishes, thinly sliced
  • 2 green onion stalks, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/2 teaspoon salt + more for flavoring
  • 4 strips of bacon, cut into small pieces
  • 2 tablespoons extra virgin olive oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, chopped
  • 3 tablespoons wine vinegar
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon red pepper flakes
  • ground black pepper to taste
  • 1/2 cup feta cheese, shredded

* A tea cup is used to measure the quantities.

Method of preparation:

In a large bowl, mix the peas, red cabbage, radishes, green onions, parsley and salt and stir.

In a large skillet over medium heat, cook the bacon with 1 tablespoon of olive oil (or without) for 10 minutes or until crispy, then remove the bacon from the pan and place it on a paper-lined plate to absorb the fat.

Fry in the same pan with 1 tablespoon olive oil garlic and garlic until soft. Then add the wine vinegar and mustard, season with salt, ground black pepper and paprika flakes. Pour the warm dressing over the pea mixture and garnish with bacon and shredded feta cheese before serving.
