Necessary products

For swamps:

  • 2 eggs
  • 50 grams of sugar
  • 10 grams of vanilla sugar
  • 65 grams of flour
  • 0.5 teaspoon baking powder
  • 2 tablespoons almond liqueur (or peach)

 

For cream:

  • 1 jar (800 grams) canned peaches
  • 12 grams of gelatin
  • 450 grams of cottage cheese
  • 130 milliliters of dry champagne
  • 3 tablespoons sugar
  • 350 milliliters of cream with a fat content of 30%
  • 10 grams of vanilla sugar

 

Method of preparation :

Preheat oven to 180 degrees. Separate the yolks from the whites. Beat the yolks with 50 grams of sugar, add the vanilla. Beat the egg whites separately with a pinch of salt and add to the yolks. Mix the baking powder with the flour and sift on the egg mass. Stir gently.

Line a detachable form with baking paper, place the dough and place in the oven for 15 minutes. Remove the prepared loaf, let it cool and soak it in the liqueur.

Drain the peaches from the liquid using a colander. Cut half of them into pieces and puree the rest. Pour half of the gelatin into 40 milliliters of cold water and when it swells, pour 20-30 milliliters of boiling water. It should dissolve and add it to the puree.

Remove the "ring" of the form. Soak the remaining gelatin. Mix the cottage cheese with the champagne and sugar. Dissolve the already swollen gelatin in hot water and mix with the cream. Whip the cream with the vanilla sugar and also add to the cream.

Spread half of the cream on the surface of the marsh and flatten. Put the peach puree on it with a spoon, then the rest of the curd cream. Decorate the cake with the chopped peaches and store it in the refrigerator for 3-4 hours.
