Necessary products:

  • 500 grams of peaches
  • 160 grams of powdered sugar
  • juice of 1 lemon
  • 2 egg whites
  • 200 milliliters of cream
  • 75 grams of chocolate

Method of preparation:

Wash the peaches, remove the stones, put the fruit in a saucepan, sprinkle with 80 grams of powdered sugar and pour 200 milliliters of water. Let simmer for 10 minutes, then allow to cool slightly. When this is done, puree with a blender, add the lemon juice and allow the mixture to cool completely.

Whisk the cold egg whites with a pinch of salt, add the remaining powdered sugar and beat until you get a kiss-like texture.

Beat the cold cream with a mixer until it thickens, add the peach puree, whipped cream, egg whites and crushed chocolate. Mix everything, put the bowl with the mixture in an ice bucket and put in the freezer for 2 hours.

Sprinkle with pieces of fresh peaches and grated or crushed chocolate.
