Required products :

  • 2 eggs
  • 80 grams of dates (8 pieces), pitted
  • 50 grams of raw almonds
  • 15 grams of walnuts
  • 50 grams of dark chocolate (over 60% cocoa)
  • 30 milliliters of melted coconut oil
  • 45 milliliters of water
  • 1 pear, cut into quarters
  • 1 teaspoon baking powder
  • pinch of salt

Method of preparation :

Melt the chocolate in a water bath - place it in a glass bowl, which you put on hot water, being careful that the bottom of the bowl does not touch the liquid. Once melted, add the coconut oil to it and stir to combine. Set aside.

Turn on the oven to preheat to 170 degrees with the fan on.

Finely grind the nuts and mix with the baking powder.

Beat the eggs in a deep bowl and salt, stir to a froth.

Peeled dates grind with water until smooth, combine with eggs. Add the ground nuts to this mixture and mix well again.

Stirring the eggs in a thin stream, stirring constantly (be careful that the chocolate is not too hot so as not to cook the eggs). Stir to obtain the consistency of cake batter.

Spread a rectangular form with baking paper and pour the dough into it. Arrange the pear on top (peeled and cleaned). Bake for 30 minutes until dry. If desired, you can make a grid on top with melted chocolate.

Cool the cake, then cut it.
