Method of preparation:
Put the breadcrumbs in a jug and pour 1/2 teaspoon of water. Strain and set aside. Put the pears in a blender, add the lemon juice, breadcrumbs, almonds, garlic and salt.
Beat until smooth, add olive oil, vinegar and anise. Beat once more and add a little more water to dilute the mixture.
Cool the gazpacho, pour into cups or bowls, garnish with cherry tomatoes and fresh basil leaves.
Serve and cool, cheers!
