Required products :

  • 6 tea cups cut into cubes sweet red peppers
  • 2 teaspoons hot pepper flakes
  • 3 tablespoons pectin
  • 3 1/4 teaspoons sugar
  • 1 teaspoon wine vinegar (white)
  • 1 tablespoon butter
  • 3/4 teaspoon salt

Method of preparation :

Wash the jars with warm soapy water and sniff them, then immerse them in boiling water for 10 minutes. Store the jars in hot water until ready to use. Put the caps inside.

Make the jelly by grinding the red peppers and hot pepper flakes in a food processor.

Mix the pectin with 1/4 cup of sugar.

Mix together the peppers, vinegar, butter, salt and the remaining 3 cups of sugar in a saucepan. Bring to the boil, stirring constantly, after 5 minutes gradually add the pectin mixture, stirring constantly. Stir until thickened for about 1-2 minutes.

Remove from the heat and remove the jars on a towel and dry the caps.

Pour the sweet jelly into the jars, leaving some of the top. Run a spatula along the walls of the jar between the glass and jelly to remove the air bubbles.

Wipe the necks of the jars with a damp cloth and close with caps.

Put the closed jars in a saucepan and cover them with water, let the liquid be at least 4-6 centimeters above them. Cook for 15 minutes under a lid, then cool. If you have a jar that is not completely full, do not sterilize it, but store it in the refrigerator and consume it as soon as possible.

After the jars have cooled completely between 12 and 24 hours, check that all lids are well recessed. Store those that are not well sealed in the refrigerator and consume first.
