Necessary products:

 

  • 100 grams of chickpeas
  • 100 grams of red beans
  • 100 grams of lentils
  • 300 grams of fresh spinach, finely chopped
  • two handfuls of rice noodles
  • two teaspoons of turmeric
  • 3 heads of red onion, cut into crescents
  • 5 cloves garlic
  • 1 stalk of leek
  • 1 bunch parsley
  • half a bunch of fresh mint
  • 1-2 stalks of fresh coriander
  • 2 fresh mint leaves
  • salt and pepper
  • olive oil
  • sour cream

 

Method of preparation:

 

Soak beans, lentils and chickpeas in water in the evening and boil them the next day until ready. In another bowl, sauté the onions, along with the mint, turmeric and black pepper.

Add finely chopped spinach, leeks, parsley, mint and coriander. Stew over low heat for 15 minutes and add to the dish.

Stir and simmer until done. At the end of cooking, add the rice noodles. When ready, remove the soup, crush and season with garlic, stir.

Distribute portions, garnish with sour cream and serve the soup warm.
