Necessary products
For the dough:
260 g of flour
170 g butter
80 ml of ice water
1/2 tsp salt
For the filling and the filling:
300 g of fleshy tomatoes
250 g corn (frozen or canned)
100 g of yellow cheese
6 tablespoons flour
10 eggs
2 tsp fresh milk
2 tsp cream (with a fat content of not less than 20%)
2 tsp salt
1 tsp ground black pepper
1 tbsp fresh thyme or 1 tsp dry
Method of preparation:
The dough. Mix the flour, salt and diced cold butter in a blender. Grind to obtain crumbs, add ice water and grind until smooth. Wrap it in foil and refrigerate for 30 minutes. When cool, roll in the form of a circle with a diameter of 7-8 cm more than the size of the form you will use. Put the dough in the pan, with it you need to cover the walls of the dish, cut out the excess. Press with a fork, cover with foil and put some weight on top so that the base does not swell when baking (you can use beans, for example). Put in the oven at 190 degrees and bake for 25 minutes. Then remove the "weight" and bake for another 5 minutes until golden brown.
The stuffing. Cut the tomatoes into thin semicircles, grate the yellow cheese.
The filling. In a large bowl, mix 2 eggs and flour, beat until smooth, then add the remaining eggs, milk, cream, salt, pepper and thyme. Put the tomatoes, corn and yellow cheese on the base, pour the topping (you will not need the whole amount). Put in the oven and bake for about 40-50 minutes. Allow to cool in the mold.
Breakfast is served warm or at room temperature.
