Required products :

  • 1 pie dough
  • 1 1/2 teaspoons sugar
  • 1/3 tea cup cornstarch
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cold water
  • 4 eggs - divided into whites and yolks
  • 2 tablespoons butter
  • peel and juice of 2 lemons
  • 1/4 teaspoon cream tartar

Method of preparation :

Roll out the dough and place it in a pie pan that you have greased beforehand. The dough should cover both the bottom and the walls of the dish. Punch with a fork and refrigerate for 10 minutes or 30 in the refrigerator.

Cover the dough with paper and place the beans on top. Bake until the loaf is golden and crispy at 190 degrees for about 20-25 minutes. Allow to cool completely.

Meanwhile, in a saucepan, combine 1 1/4 teaspoons of sugar, flour, cornstarch and salt. Carefully pour the cold water and stir to combine. Bring to a boil for one minute, stirring constantly, then remove from the heat.

In a small bowl, beat the yolks with a fork, add 1/4 cup of sugar to them. Carefully pour the mixture of yolks into the warm flour mixture and stir constantly. Return the casserole to the hob and stir to thicken the sauce and give it a creamy consistency. Remove from the heat.

Add the butter, lemon juice and zest, then pour the mixture over the cooled loaf (the cream should also be cooled).

Reduce the oven temperature to 175 degrees.

Beat the egg whites with the tartar cream until soft peaks and add the remaining sugar to them.

Spread the kissing mixture on the lemon cream and bake for 12 minutes until the egg whites are cooked. Cool completely for 1 hour at room temperature, then refrigerate for 3 hours.
