Required products :

  • 500 grams of spinach or a mix of spring greens (nettle, dock, etc.)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, pressed
  • 3 broken eggs
  • 80 grams of shredded cheese
  • 55 grams of grated Parmesan cheese
  • 250 grams of ricotta
  • 2 tablespoons dill, chopped
  • peel of half a lemon
  • 50 grams of melted butter
  • 250 grams of pie crusts

Method of preparation :

Blanch the green leafy vegetables for 4-5 minutes in hot water until soft. Drain them and transfer them to a bowl of ice-cold water. Then strain again and squeeze the moisture with your hands. Cut into small pieces.

Turn the oven to preheat to 180 degrees.

Heat olive oil and fry onions in it until soft - about 6-8 minutes. Add the garlic, after releasing its aroma after about 30 seconds transfer to the bowl with the vegetables.

Add the eggs, cheese (cow's cheese, parmesan and ricotta), dill and lemon zest, season with salt and pepper to taste and mix well.

Grease a 25 cm pan with butter and place 4 pastry crusts next to each other, overlapping and the edges coming out of the pan. Grease with oil and repeat with 5 more crusts, each greased.

Pour the filling and put the rest of your pastry crusts on top, re-greased and wrap with the ends of these crusts that you put at the beginning. Grease the whole pie with the remaining butter and bake for 40-45 minutes until golden.

Allow to cool before removing from the pan and cutting.
