500 g puff pastry
1 egg for spreading
1 medium eggplant
1 onion
2 cloves garlic
3-4 tablespoons oil
3 tablespoons cream (fat content about 30%)
3 tablespoons grated yellow cheese

Method of preparation:
Peel an eggplant and cut it into small cubes, finely chop the onion and garlic. Heat the oil and fry the onion in it until golden. Then add the eggplant and garlic, stir and close the jar with a lid. Allow to cook over medium heat, stirring occasionally. When the aubergines are almost ready, season with spices to taste, add the cream and stir. After part of it evaporates, add the yellow cheese, stir, remove from the heat and allow the filling to cool.
