Required products :

For the dough:

  • 200 grams of flour
  • 165 grams of softened butter
  • 55 grams of powdered sugar
  • a large pinch of salt

For cream:

  • 4 eggs
  • 290 grams of sugar
  • 165 milliliters of lemon juice
  • 50 grams of flour
  • peel of 2 large lemons
  • powdered sugar for sprinkling

square baking dish measuring 23 x 23 centimeters

Method of preparation :

Beat the softened butter with the powdered sugar. Sift the flour with a pinch of salt and add to the butter, kneading the dough.

Cover the prepared form with parchment and distribute the dough evenly in it. To make this easier, you can cover it with plastic wrap and use a rolling pin to shape the layer. Put the dish in the refrigerator for 30 minutes, then bake the marshmallows in the oven at 180 degrees for about 10 minutes (it should dry and become light in color).

It's time to prepare the cream.

To do this, carefully peel the lemon zest, squeeze their juice and strain it.

Beat the eggs with the sugar and flour, add the lemon juice and the grated citrus peel. Mix everything thoroughly.

Apply the cream on a warm (but not hot) sheet and return to the oven until the coating is firm (about 20 minutes at 160 degrees). It will harden further as it cools.

If the surface starts to burn during baking, cover with aluminum foil.

It remains to cut into squares and sprinkle with powdered sugar.

Enjoy your meal!
