Necessary products:

1.5 cups long grain rice

750 grams of large carrots

2 large onions

100 grams of dates

100 grams of dried apricots

5 cm fresh ginger root

1 tsp cinnamon

1 tsp ground cumin

2 tablespoons honey

4 tablespoons lemon juice

3 cups vegetable broth

1 sprig of mint

2 tablespoons oil

salt and pepper to taste

Method of preparation:

Clean the rice, wash it and pour cold water over it, leave it for 30 minutes.

Cut carrots into large cubes, onions into circles, grind ginger. Heat the oil and fry the onion for 5 minutes. Add the ginger, cumin, cinnamon, coriander and 0.25 tbsp hot pepper, stir. Then add the chopped carrots and leave on the stove for 10 minutes at a moderate temperature, stirring occasionally. Wash and dry the dates and apricots, add them together with honey and lemon juice, salt. After 2 minutes, remove from heat.

Drain the rice from the water with a colander, pour it into the bowl with the other products and level the surface. Do not stir! Carefully pour the broth and close with a lid. After 15 minutes, remove from the heat and remove the lid. Put a sprig of mint on the rice and close again for 10 minutes.

The pilaf with carrots and dried fruits is ready.
