Required products :

700 grams beef liver
2 tea cups rice
1 quince
3 tomatoes
1 onion
1-2 cloves garlic
70 grams oil
frying oil
1/2 teaspoon dry white wine
1 bay leaf
salt and ground black pepper to taste

 

Method of preparation :

Pour 3 tea cups of water into a saucepan and place on the stove. When the liquid boils, add salt to taste, add the butter and rice. Bring the water to a boil again, reduce the heat and let the beans cook for about 20 minutes.

 

Wash the liver thoroughly, clean it from the membranes and veins, cut into medium-sized cubes.

Fry them in hot oil for 3-4 minutes.

Fry the finely chopped onion separately and pour the white wine. Stir thoroughly.

Peel the tomatoes and cut into large pieces. Finely chop the garlic, clean the quince from the core with the seeds and also cut.

 

Add the prepared fruits and vegetables to the onion, season with salt and pepper, put the bay leaf and let everything simmer for about 10 minutes.

Then pour the liver into the resulting aromatic mixture and once it boils, close the jar with a lid for a few minutes.

 

Form a circle of rice in a suitable plate, put the liver in the middle and pour the sauce.

 

Decorate the dish with pieces of quince and fresh tomato.
