Required products :

  • 250 grams of Basmati rice
  • 250 grams of trout (maybe more)
  • 250 grams of carrots
  • 1 onion
  • spices: saffron, a mixture of different types of pepper
  • pistachios, sesame
  • 70 - 80 milliliters of olive oil
  • lemon juice
  • soy sauce

Method of preparation :

Marinate the fish in lemon juice and soy sauce for a few hours to remove the specific flavor. Pour hot water over the saffron and let it soak.

Fry the fish (cut into pieces) in hot oil over medium heat. Fry until almost done and set aside.

Fry the chopped onion, add the carrots (in straws), fry briefly, pour water and leave on the stove for 15 minutes. During this time, wash the rice and pour water over it. Prepare the pistachios as well.

Add the rice to the vegetables and add the saffron tincture (strain it). Pour hot water, the level of which should be 2-3 centimeters above the rice. Put everything on high heat until the water evaporates. Spread the fish on top and sprinkle with ground pepper. Close the pan with a lid and let the dish simmer for 20 minutes.

Meanwhile, roast the sesame seeds in a dry pan until a delicious aroma appears.

Put the rice in a plate, the carrots on it (you can mix them), the pistachios. Sprinkle the fish with sesame seeds, the onion has "melted".
