Necessary products:

500 grams of puff pastry

For the stuffing:

90 grams of butter

200 grams of powdered sugar

250 grams of pistachios (unsalted and cleaned)

2 egg yolks

1 packet of vanilla sugar (about 10 grams)

For decoration:

1 egg

ground pistachios

Method of preparation:

For the filling: mix the butter and sugar, add the egg yolk and stir until you get a homogeneous mixture. Fill the pistachios with hot water and leave them until the water cools to warm. Peel a squash, grate it and fry it lightly in a pan. Grind the nuts (into large crumbs), add them to the mixture of egg and butter and mix well. Then put half of the dough in a pan sprinkled with flour, spread the filling, but leave 1-2 cm at the end free. Brush the edges with egg white and place the second layer of dough, lightly pressing the edges to connect the two parts. Punch the pastry on top with a fork and draw lines with a knife without cutting the dough. Brush with egg white (maybe a whole egg), sprinkle with crushed a tablespoon of sugar and ground nuts. Bake for 20 minutes in an oven at 210 degrees, a golden crust should form.

The finished pie is good to serve cold.
