How To Cook Pizza In A Pan With Eggplant And Ricotta Cheese - Recipe

If you want to prepare a pizza in a different way from the one we know by baking in the oven, we suggest you make it in a pan. The result is a crunchy loaf with a slightly smoky aroma. You can supplement the vegetable stuffing with mozzarella.

Required products :

  • 1 teaspoon warm water
  • 1 teaspoon sugar
  • 1 teaspoon dry yeast
  • 1 teaspoon flour
  • left
  • 2 tablespoons olive oil
  • 1 teaspoon tomato sauce
  • 2 cloves garlic, crushed
  • pepper
  • 1 eggplant, sliced
  • 150 grams of ricotta

Method of preparation :

Put the sugar and yeast in the warm water, cover with a towel and leave for 10 minutes until the yeast dissolves.

Pour the flour and 1/2 teaspoon of salt into a bowl, add a tablespoon of olive oil and yeast. Knead a soft dough (you will need to add 3-4 tablespoons of water).

Cover the dough with a towel and leave to rise for an hour.

Meanwhile, heat the tomato sauce, add the garlic and season with salt and pepper. Cook to reduce and thicken the consistency.

Heat 1 tablespoon olive oil in a grill pan and fry the eggplant slices in it until done.

Roll out the risen dough and grease it on one side.

Heat a frying pan and place the dough in it with the greased side down. Bake for a few minutes under a lid (about 4 minutes per side) and turn, grease again with olive oil. When both sides are browned, return to the original position and spread with tomato sauce. Arrange the eggplant slices and arrange the ricotta in piles.

Serve the pizza immediately, and if desired you can sprinkle with chives, parsley or basil.
