Required products :

  • 1 teaspoon warm water
  • 1 teaspoon sugar
  • 1 teaspoon dry yeast
  • 1 teaspoon flour
  • left
  • 2 tablespoons olive oil
  • 1 teaspoon tomato sauce
  • 2 cloves garlic, finely chopped
  • 1 eggplant, cut into slices
  • 1 tablespoon oil
  • 150 grams of ricotta

Method of preparation :

Put the sugar and yeast in warm water, stir and leave for 10 minutes to swell.

Put the flour in the bowl of a mixer, add 1/2 teaspoon of salt, 1 tablespoon of olive oil and pour the yeast.

Knead with a mixer with a dough attachment, adding 3-4 tablespoons of water during kneading to obtain a soft elastic dough. If you wish, you can knead the dough by hand.

Cover the bowl and leave the dough to rise for 1 hour at room temperature.

Put the tomato sauce in a pan and add the garlic to it, season the sauce with salt and pepper and simmer for 8-10 minutes to thicken.

Grease with the remaining olive oil grill pan and fry the eggplant slices for 2-3 minutes on each side.

Transfer the dough to a well floured surface and roll it out.

Put 1 tablespoon of oil in a pan and when it warms up, put the dough inside, trying to cover the bottom of the dish well.

Bake it for 4 minutes under a lid and turn, bake for another 3-4 minutes. Turn the marshes again.

Spread with tomato sauce, arrange the eggplant and ricotta, serve.
