Necessary products:

 

for swamps

 

  • 120 grams of quinoa
  • 1 cup boiled red beets
  • 1 tablespoon husk (plantain)
  • 1/2 teaspoon baking powder
  • 2-3 tablespoons of water
  • salt to your taste
  • garlic powder to taste

 

for the sauce

 

  • 80 grams of raw porridge
  • 2 tablespoons olive oil
  • 2 tablespoons almond milk
  • juice of half a lemon
  • 1 clove garlic
  • salt to taste

 

for garnish

 

  • 1-2 tablespoons boiled peas
  • 50 grams of cherry tomatoes
  • 1 tablespoon green beans
  • 50 grams of blanched zucchini
  • a handful of fresh arugula leaves
  • basil and parsley, chopped

 

Method of preparation:

 

Preheat the oven to 200 degrees and cover the pan with a sheet of parchment. Soak the quinoa for 2-3 hours in water, drain and dry. Put it in a blender and add the beets, garlic, salt, baking powder and 2-3 tablespoons of water. Beat until all ingredients are mixed.

Add the husk and stir until smooth. Pour the mixture into the pan and form a loaf. Bake for 20-25 minutes and cool. Prepare the sauce by mixing all the ingredients in a blender and beat until smooth.

Spread the vegetable batter with the sauce, garnish with peas, cherry tomatoes, beans, zucchini, arugula and fresh spices. Optionally add chopped figs, boiled purple potatoes or cauliflower. Cut, serve and enjoy eating.
