Grapes are an ideal side dish for a salad, but how about if they are part of a pizza filling? This surprising addition is a sweet contrast to the refined Pecorino Romano cheese, herbal pesto and juicy chicken. Grapes slow down the aging process, so without remorse eat a slice of pizza.

Required products :

  • Pizza dough
  • olive oil for lubrication
  • 100 grams of pesto (basil or other)
  • 100 grams of red grapes, the berries should be cut in half
  • 230 grams of grated chicken breast
  • 3 cloves garlic, chopped
  • 100 grams of mozzarella cheese, cut into thin slices
  • 3 tablespoons Pecorino Romano cheese, grated (or yellow cheese)
  • black pepper to taste
  • green onions for sprinkling

Method of preparation :

Preheat oven to 220 degrees.

Spread the dough in a circle about 30 cm on a lightly floured surface. Carefully transfer it to a greased pan. Spread the pesto (or tomato sauce) evenly over the dough, not putting on the edges.

Garnish with chicken, grapes, garlic and mozzarella. Sprinkle with Pecorino Romano cheese (or yellow cheese) and black pepper. Bake for 20 minutes or until the crust is golden brown. Garnish with green onions, cut into 12 pieces and serve.
