Necessary products:

 

for the dough

 

  • 400 grams of flour
  • 4 grams of dry yeast
  • 150 milliliters of warm water
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1-2 tablespoons olive oil

 

for pizza

 

  • 1 eggplant
  • 2-3 tablespoons tomato paste
  • chopped fresh oregano
  • 50 grams of chopped olives
  • 6 cherry tomatoes
  • 100 grams of cheese
  • 50 grams of grated Parmesan cheese
  • salt and pepper
  • chopped fresh basil

 

Method of preparation:

 

Make the dough by sifting the flour into a bowl and add the dry yeast, water, salt, sugar and olive oil. Stir, knead and leave to rise. During this time, wash, dry and cut the eggplant.

Bake them in a dry grill pan on both sides and set aside. Roll out a loaf, spread it with tomato paste and sprinkle with oregano and basil. Arrange the aubergines and garnish with olives, chopped tomatoes, cheese, salt and pepper.

Sprinkle the pizza with grated Parmesan cheese, preheat the oven to 200 degrees and bake for 25-30 minutes. Cool, cut and serve.
