How To Cook Poached Eggs With Tomato Sauce With Curry - Recipe

Required products :

  • 2 tablespoons peanut butter
  • 1 and 1/2 cups onion, chopped
  • 1 tablespoon garlic, chopped
  • 1 tablespoon ginger root, peeled and chopped
  • 1 jalapeno pepper, chopped
  • 2 teaspoons curry powder
  • beehive salt and pepper to taste
  • a pinch of sugar
  • 1 can of diced tomatoes, drained and preserved their liquid
  • 1/2 cup coconut milk
  • 1/2 cup fresh coriander, chopped
  • 4 eggs
  • 4 toasted slices of wholemeal bread
  • 1/4 cup green onions, chopped
  • coriander leaves for garnish (optional)

* A tea cup is used to measure the quantities.

Method of preparation :

Heat the butter in a large skillet and saute the onion, garlic, ginger and jalapeno hot pepper for 5 minutes or until softened, stirring often. Add the curry powder, a pinch of sugar, salt and pepper to taste. Fry for 2 minutes, stirring constantly. Pour the diced tomatoes into the pan and cook for 5 minutes, stirring often. Add half of the preserved liquid from the tomatoes, bring to a boil and pour the coconut milk and coriander, simmer for 10 minutes. If the sauce is too thick, add the remaining tomato liquid.

Beat the eggs in separate cups and pour one by one carefully into the pan with the sauce. Cover with a lid and cook for 5 minutes. Serve the toasted slices of wholemeal bread on a plate and place 1 egg with tomato sauce on each. Garnish with fresh green onions and coriander leaves if desired.
