Required products :

  • 400 grams of a mix of mushrooms, chopped
  • 4 sprigs of thyme + more to serve
  • 6 cloves garlic, crushed
  • salt and pepper
  • 1/4 tea cup olive oil
  • 2 tablespoons butter
  • 1 cup cornmeal
  • 100 grams of parmesan, grated + more to serve
  • 1 tablespoon wine vinegar
  • sea ​​salt

Method of preparation :

Season the mushrooms with thyme, add garlic, salt and pepper and bake at 170 degrees.

During this time, heat 4 1/2 teaspoons of water. When it boils, remove from the heat, pour in the polenta and add the butter. Stir to melt the butter and return to the hob, stirring constantly. Cover with a lid and transfer to the oven, where bake for about 25-30 minutes, until done.

Remove the polenta from the oven and increase the temperature to maximum to bake the mushrooms until golden brown.

Mix the polenta well. Add parmesan to it and when it melts, season to taste.

Cover and keep warm until the mushrooms are cooked through.

Drizzle the mushrooms with vinegar and allow to cool briefly.

Pour the polenta in a plate, and on top put the mushrooms, sprinkle with sea salt, thyme and Parmesan.
