How To Cook Polenta With Vegetables And Fresh Basil - Recipe

Learn how to cook "Polenta (porridge) with vegetables and fresh basil". Delicious recipe.

If you find porridge for a boring and tasteless dish, it is because you have not tried it in combination with fragrant roasted vegetables. You can even present the delicious dish as a substitute for pizza and everyone at home will be satisfied.

Required products :

  • 1 liter of vegetable broth
  • 1 1/3 tea cup cornmeal for polenta
  • 1 cup grated Parmesan cheese
  • 2 tablespoons thyme leaves
  • 1/2 red onion, cut into thin crescents
  • 1 zucchini, thinly sliced
  • 100 grams of grilled eggplant - cut into thin slices
  • 100 grams of marinated roasted peppers
  • 100 grams of fresh mozzarella (into balls or cut into small cubes)
  • a little olive oil for watering
  • 1/3 cup pitted Kalamata olives
  • basil leaves for decoration

Method of preparation is:

Turn the oven to 200 degrees and grease a pan with a falling bottom with olive oil.

Pour the broth into a saucepan and add 1 teaspoon of water, place on the stove and turn it to medium. When it starts to simmer, pour the polenta gradually, stirring constantly to absorb. Cook for 10-12 minutes until the consistency is thicker, be sure to stir occasionally.

Add the parmesan and thyme, wait a few more minutes for the cheese to melt and all the products to combine until smooth.

Pour into the prepared pan, flatten and bake for 20 minutes to give the polenta a golden color.

Remove from the oven and arrange the vegetables on top - onions, eggplant, zucchini, peppers and mozzarella.

Season with a few streams of olive oil and return to the oven for another 5-7 minutes to melt the cheese. Remove from the oven and allow to cool in the mold. 

Remove from the pan, sprinkle with olives and garnish with a few fresh basil leaves.
